INGREDIENTS:
75 grams coconut flour
30 grams sesame or Almond Flour *
20 grams Sweetnz Premium Blend
¼ tsp sea salt
60 grams coconut oil, solid and cool NOT melted
Zest of one large lime
4 Eggs
½ tsp Sweetnz Lemon Stevia Drops ( 3 full squirts)
60ml lime juice.
80 grams Sweetnz Premium Blend
15 grams of flaked coconut.
30 grams sesame or Almond Flour *
20 grams Sweetnz Premium Blend

80 grams Sweetnz Premium Blend
15 grams of flaked coconut.
METHOD:
Preheat oven to 175 C
Line an 8” x 8” baking tray, or use a silicone pan.
Whisk together thoroughly, coconut flour, sesame or almond flour, 20 grams of premium blend and salt.
Put into a processor and pulse in the coconut oil.
Press firmly and evenly into pan and bake for 10 mins.
Meanwhile beat eggs, lime juice, zest and 80 grams of premium blend and lemon stevia.
Pour egg mixture onto cooked crust, sprinkle with the coconut flakes and bake for 12-15 mins.
Let cool for at least 10 mins before cutting into 16, ideally leave to cool completely before taking out of tin - if you can resist waiting that long !!!
Best kept in the fridge to store.
*Note: I just blitz either sesame seeds or raw almonds in my bullet to make flour, you will need a fairly high powered machine to do this a processor won’t work as well.
