Sugar Free Marzipan

I have always made my own marzipan but to be able to make it "sugar-free" is just the icing on the cake!!!

Almond paste is so delicious why not use it to make chocolate covered sweets stuffed with nuts or dried fruits. Enjoy !!!

 

Sugar free marzipan by Sugar Free Food NZ

Ingredients:

180grams of Almond Flour
80 grams Sweetnz Icing (not) Sugar
2 tsp Almond Extract
6 drops Sweetnz Vanilla Stevia
1 tsp Rose Water
1 Egg White
2 tsp water

 

Method:

In a bowl mix together the almond flour and Icing (not) Sugar
In another bowl put the egg white, almond extract, and rose water, vanilla stevia and just mix a little with a fork.
Add the liquid to the dry ingredients and mix until the mixture forms a ball.
If the mixture is a little too wet add a bit more almond flour, and if too dry add a little water. (Eggs and teaspoon can vary slightly)
Roll into a sausage shape and wrap in wax paper and then in a sealed container or bag and store in the fridge until needed.
This also freezes perfectly well.
